Smashed Spiced Chickpeas (aka Hummus)
This stuff is amazing and there is no other band you could smash this up to then TV on the Radio. I personally recommend, Halfway Home, the opening track of their third album. It has lyrics like “Am I not rolled into your crush?’ and with a rocking beat it’s perfect for making this slightly adulterated hummus recipe.
400g/14.5 oz. tin of chickpeas
a good pinch of cumin seeds, pounded
1-2 small dried red chilis (or chili powder/paste)
1 clove of garlic
juice of 1 lemon
salt and freshly ground black pepper
This is simple. Just chuck everything in the blender and blitz… once it starts to look creamy (in a chickpea kind of way) have a taste. If you think it needs more lemon/salt/olive oil/chili chuck it in. Personally I always get carried away with the lemon as it makes it twang and I might sometimes add an extra clove of garlic if they’re on the small side as the raw garlic adds the ooorrrggghhh (Jamie Oliver’s very apt word).
To make it look pretty – heap it into a bowl, smooth the top, drizzle with olive oil and sprinkle coriander/parsley leaves on top or a bit of chili. I usually chuck it in the fridge while I toast some flat breads for dipping.
