Bill Granger’s Lemon Delicious Puddings
These were the first sweet indulgence I made when I decided cooking had to become a serious, loveable part of my life (i.e. threat of moving out of home was looming and all I really knew how to cook was pasta, thai curry and slightly pebble like muffins).
Anyway these yellow babies are delicious… I love putting them in mugs with a handle, so you can hold them easily while watching a comfort movie.
3 tbsp all purpose flour, sifted
1/3 cup lemon juice
2 tsp lemon zest
4 eggs, seperated
2/3 cup caster sugar
200ml/7 oz milk
2 tbsp butter, melted
Preheat the oven to 180C/350F and lightly grease four 250ml cups (you can use teacups, coffee cups or little ramekins – I love that word – just make sure they’re oven proof). Put the flour, lemon juice, lemon zest and egg yolks into the large bowl and add all but 2 tbsp of the caster sugar. Whisk together well, then add the milk and melted butter and whisk again until well combined.
In another bowl whisk the egg whites and remaining caster sugar and firm peaks form. Gently fold half the egg white into the lemon mixture with a metal spoon, then fold in the rest. Spoon into the dishes and bake for 15 minutes, or until light golden and set (I usually put them in a bain-marie so they stay moister).
These little puddings are mini bowls of lemon delicious – golden sponge topping a gooey lemon sauce underneath. Bill Granger
